I was sitting at my computer wondering what to do with myself on this rainy, miserable Sunday. All of a sudden an idea came to me—I should bake. I’ve been staring at these two ripe bananas in our fruit bowl for a while wondering what I could possibly do with them. Banana bread. Perfect. I rummage through my fridge and see blueberries. Blueberry Banana Bread. Even better.
Since I’m not a seasoned baker, I relied on the ever-so-helpful Pinterest for a recipe. I searched through posts and found a recipe, on Baking Bites (thank you for this delicious recipe!), that only required two ripe bananas (simply because I only had two….). I quickly got out all the ingredients and began baking.
For the recipe you’ll need: 2 cups of all-purpose flour; 1 ½ tsp. baking powder; ¼ tsp. salt; 1 cup sugar; 3 tbsp. vegetable oil; 2 large ripe bananas, mashed; 1 large egg; 1 tsp. vanilla extract; and 1 1/3 cups blueberries.
First, preheat the oven to 350 and grease a loaf pan. Combine flour, baking powder and salt. Next combine sugar, vegetable oil, egg, vanilla, and bananas until there aren’t any chunks. Then add flour mixture to sugar mixture and mix until everything’s combined. Lastly, fold in blueberries and pour into loaf pan. Bake for 60 minutes then remove from oven and let cool for about 10 minutes (if you can wait that long!).
It’s simple, easy, and delicious. Now I know what to do with myself on rainy days. Bake. If anyone has any good recipes, I’d love to try them! But until next time, keep eating!
