- 2/3 c. thinly sliced and halved roasted beets
- 2 tsp. walnut oil
- 1 tbsp. dry-roasted, salted pistachios
- 1/2 baby arugula
- 1 tbsp. thinly sliced shallot
- 2 tbsp. crumbled goat cheese
Once the rice is done, combine the flavors and there you have it. An insanely quick, healthy, and delicious meal.
