This Dish Will ‘Bowl’ You Over!

This is one of my favorite dishes of all time–I can’t help but make this EVERY week, it’s that good. It’s a combination of some of my favorite foods: rice, salmon, and spinach. Throw in an insanely delicious sauce, and I’m practically drooling.

This Asian Salmon Bowl with Lime Drizzle has got me hooked.

The beauty of this dish is that it’s incredibly delicious and incredibly simple. You’ll need: 1 cup jasmine rice; 2 tsp. unsalted butter; 1 large garlic clove, finely chopped; ¼ tsp. red pepper flakes; 3 tbsp. pure maple syrup; 3 tbsp. fresh lime juice; 3 tbsp. reduced sodium soy sauce; 1 tsp. cornstarch; 4 (4 oz.) pieces of salmon; 1 tsp. canola oil; 2 packages of baby spinach (5 oz. each) and 2 tsp. black sesame seeds.

Heat the oven to 400. Cook the rice as directed. In the meantime, melt the butter over medium heat and sauté the garlic and red pepper flakes for about a minute. Then add the maple syrup and soy sauce, and cook until it starts to bubble, about three minutes. Next, in a small bowl, combine the cornstarch plus 1 tsp. of water, add that to the garlic glaze and cook for about a minute. Then arrange the filets on a foil-lined baking sheet; spread some of the glaze (but not all) on to the fish and roast for about 12 minutes—depending on your oven it might not take as long! Finally, sauté the spinach and cook until wilted–once that’s done, plate, and serve! Voila, an extraordinary dinner that’s quick and easy, and not to mention healthy (BONUS!). I guarantee you’ll be drooling, too.
